![]() ![]() You see, cream cheese was invented in the Northeast and the first documentation of this dip, although different, came from Good Housekeeping in 1908. Surprisingly, it wasn't originated in the South but rather up North. Pimento Cheese is one of the most popular southern spreads that's traditionally made with cheddar, pimentos and mayo. ![]() And no matter which way I serve it, guests always beg for the recipe. I've used it in everything from omelets to breakfast grilled cheese. Now that I cook breakfast at my family's inn, I love to keep her sassy spirit alive by keeping it on the menu. Then she'd laugh her ass off as their face turned bright red. They'd try to dodge her and she'd follow up with a big smooch right on the mouth. These dudes would be so thrown off by this. You don't understand how much I loved this. She also greeted all of my guy friends (ALL OF THEM) with a kiss on the lips. If you came to her house, there would be a plate full of delicious southern food in front of you within seconds. Meme also took great pride in showing southern hospitality. She did not give two cents if you were full or not. I still giggle and think about doing that every time I pick one up. One time I saw her eat a freshly grown vidalia onion like an apple. I'd watch her spread in on crackers or eat it straight up with a spoon. She always had a Tupperware (and by tupperware I mean one of a dozen old, unmarked, re-used butter containers) full of pimento cheese in her fridge. My pimento cheese recipe is inspired by my Grandma, known to many as Meme, but with a few added twists. And there's a reason that they're one of my most requested recipes. Sliced Conecuh Sausage (grilled or sauteed with barbecue sauce if desired).On a simple disposable tray (the one in the photo is from Dollar Tree) arrange the following: The ingredients are simple, but the results are SO yummy. Wickles pickles and Conecuh sausage are made in Alabama, which makes this redneck charcuterie “Alabama style.” You can tweak the products to your liking. How to Make an Alabama Style Redneck Charcuterie If you can’t find Wickles, I suggest a spicy bread and butter pickles rather than dill pickles. These are my favorite pickles ever! They are sweet & spicy and with a touch of heat. I use Wickles pickles, another Alabama-made product. It may taste good, but you’ll be giving up the redneck factor significantly lol. Don’t substitute Ritz or any other type of cracker. I use my favorite saltine crackers – Nabisco. You can also saute the sausage in a skillet and omit the sauce. You can grill the sausage and coat the slices in barbecue sauce (photo below). The slices are the size of a dime and fit perfectly atop the saltine cracker. There are larger links and smaller ones I buy the smaller links. It is my favorite! You can buy Conecuh sausage in spicy or regular and my personal favorite is the regular hickory smoked. In Alabama, we love our homegrown Conecuh sausage. Duke’s is close to homemade and my personal preference for pimento cheese. Cracker Barrel, Cabot, and Tillamook are great options. ![]() Half largely grated and half finely grated with the smaller shred side of a box grater is perfect. Pimento cheese needs the kick of sharp cheeses.
